MONTICELLO, MN — Chipotle Mexican Grill is set to open its doors on Monday, December 30, marking the first operational business in the highly anticipated Big River development.
The fast-casual restaurant, located at 779 Chelsea Road, is currently in the final stages of preparation, with staff undergoing training in key areas like burrito preparation, guacamole-making, and register operations.
Chipotle is still looking to hire more employees to join its team of around 30, with opportunities available both locally in Monticello and nationwide. Those interested in applying can visit the company’s online portal.
The new Chipotle will offer its signature menu of customizable burritos, bowls, tacos, and quesadillas, along with sides and drinks. In addition to traditional indoor dining and takeout, the restaurant will feature a “Chipotlane” drive-thru, allowing customers to order ahead and pick up their food at the window.
Located alongside Interstate 94, Chipotle is part of the first phase of the Big River development, which also includes an adjacent Starbucks. The coffee chain is expected to open in early spring 2024. Both businesses will offer outdoor seating areas and drive-thru lanes for added convenience.
An additional 8-acre expansion is also underway, with plans for eight new buildings, including a quick-service chicken restaurant such as Chick-fil-A, Raising Cane’s, Wingstop, or Popeyes.
Other amenities planned for the Big River development include a Maverik convenience store, Valvoline oil change services, Les Schwab Tire Center, a tunnel car wash, and a bank. Construction on the Valvoline, Maverik, and Les Schwab locations is expected to begin in the spring.
