Collegetown Bagels Opens First Syracuse Location on Marshall Street

Collegetown Bagels, a popular family-owned business, has officially opened its first Syracuse location on the corner of Marshall Street and University Avenue. The shop drew in a large crowd on its opening day, with lines stretching from the counter to the door, as customers were eager to try its variety of sandwiches, bagels, and coffee.

This Syracuse opening comes just weeks after the closure of the building’s former tenant, Schoolyard Bagels. Gregar Brous, co-owner of Collegetown Bagels, explained that the idea of expanding to Syracuse had been on the family’s radar for a while, even before the COVID-19 pandemic. He noted that Syracuse, much like their hometown of Ithaca, is a college town, making it a natural fit for their business model.

“We really like the energy of college towns,” Brous said. “Young people bring fresh perspectives, and they’re often thinking about how they can contribute positively to the world. It’s a good environment for our business.”

Expanding A College-Town Favorite

Collegetown Bagels has a strong presence in Ithaca, with four eateries and two bakeries that serve both Cornell University and Ithaca College. Brous said the Syracuse shop will follow a similar model, catering to students by offering breakfast, lunch, dinner, and late-night options. For now, the Syracuse location operates from 8 a.m. to 3 p.m. daily.

Since the opening, Syracuse University students have embraced the new addition to Marshall Street. They’ve praised the shop’s quick service, welcoming atmosphere, and outdoor seating, which offers a convenient spot to grab a meal between classes.

Asher Gonzalez, a sophomore living in Milton Hall, expressed excitement about having a new dining option so close to campus. “It’s just a block away, and I think it’s going to be a great addition to Marshall Street. It brings more variety and keeps that small business feel,” he said.

Gonzalez also highlighted the nutritional value Collegetown Bagels brings compared to other fast food options in the area, offering healthier alternatives.

Convenience for Students

Lucy Flemer and Marisa Traver, both freshmen, echoed Gonzalez’s sentiments. The two roommates have already started meeting up after class to enjoy bagels and coffee at the shop’s outdoor tables. Given its proximity to several SU buildings, including the Whitman School of Management and Marshall Square Mall, the location is particularly convenient for students taking classes nearby.

Traver noted that the shop fills a gap in the local dining scene, offering quality bagels that were previously hard to come by on or near campus. “The campus cafes have bagels, but they’re not as good as what we’re used to. This is a big improvement,” she said.

A Unique Menu for Syracuse

Collegetown Bagels offers a range of specialty bagels, sandwiches, and coffee. One standout item is a sandwich named after Brous’ daughter and business partner, Lindsey. To cater to the Syracuse community, the shop has introduced new menu items, such as fresh-squeezed “Cuse Juice” orange juice, which Brous hopes will become a local favorite.

“We like to adapt our menu and service style to the neighborhoods we serve,” Brous explained. He added that the Syracuse location will continue to evolve based on customer feedback, with plans to add more gluten-free options and popular items like scallion cream cheese.

Giving Back And Looking Ahead

Beyond food, Brous emphasized the company’s commitment to supporting the Syracuse community, just as they have done in Ithaca. He mentioned plans to partner with local organizations and find ways to give back to the city.

Looking ahead, Brous hinted at possible expansions within Syracuse, depending on the success of the Marshall Street location. He told WSYR-TV that other stores may open if this one does well.

For now, Collegetown Bagels plans to extend its hours and menu offerings in the near future, with an official grand opening event to be announced in the coming weeks.
